What makes our coffee different
Specialty coffee is defined as coffee that scores above 80 points on a scale of 100. It is grown at high altitudes, harvested at the optimum moment and handled with the utmost care.
At La Nostalgia, we are proud to grow our coffee at 5000 feet above sea level, in the highlands of Guatemala, scoring 83.5. What makes La Nostalgia different is our completely artisanal process, carried out by local producers who have harvested coffee for generations.
Our coffee comes from local farms and is hand-picked with care and attention by the farmers, who consider coffee to be more than just a source of income for their families, but also a source of work for their entire community.
As for the washing process, it involves the removal of the fruit, leaving a sticky mucilage that is eliminated by submerging it in a tank of water for 24-36 hours. Subsequently, the coffee beans are washed with water and dried in the sun. These coffees are usually characterized by their cleanliness and brightness.
At La Nostalgia, we also dry our coffee in the sun, which contributes to it acquiring a more flavorful and aromatic taste. Due to the fact that the seeds of coffee processed in the natural sun are enclosed in the cherry for a longer period of time, the resulting flavors are fruitier and tend to have more body.
In addition, our artisan coffee is roasted in small batches, using micro mills. This process allows us to enhance and highlight the unique flavors of each coffee. Specialized roasters apply their experience and knowledge to this special type of coffee, creating customized roasting profiles that enhance and highlight the natural flavors of each variety of coffee that we offer.
